Our tradition of baking these cakes goes back many generations and we keep our recipe as a family secret. Our cakes are baked fresh everyday in the Cayman Islands. Each cake is moist, made without preservatives, from the finest ingredients including fresh eggs, high quality New Zealand Anchor butter and walnuts and our aged oakbarrel Tortuga five-year-old Gold Rum. Each cake is individually hand glazed and heat-sealed vacuum packed. This gives the cakes a shelf life of six months. They keep indefinitely if refrigerated or frozen. Available in 33 oz., 16 oz., and 4 oz. sizes.
